This wine has wonderful citrus and tropical aromas mixed with apple and mild baking yeast. Star fruit flavors and more apple are complemented with a nice creamy finish. Delicious for special occasions or just hanging out.
Coyote Canyon Vineyard – Horse Heaven Hills AVA
2016 was another warm vintage in Washington State which resulted in an early harvest. In the spring, we had lots of wet weather that helped the early season growth. The sun was out and shining through Spring and Summer, but temperatures rarely got over 100 degrees. The warm weather without extremes allowed the grapes to ripen without being overly stressed. We did pick our white wines a little earlier than average. The grapes for this sparkling were the first grapes we picked of the season.
This exciting, fresh, Spanish grape is a rare variety in Washington State. Coyote Canyon Vineyard was the first in the state to plant Albariño, and our winery is one of only a handful privileged to work with it. In 2014 we decided to make our first sparkling wine and loved it so much we had to keep doing it. We only make a small batch each year for our tasting room and wine club members. Sparkling wine can seem intimidating sometimes and we want to dispel that notion. Sparkling wine can be an everyday affair. In order to pick with high acidity, we picked the portion of Albariño for our Sparkling wine three weeks before our regular Albariño. The fruit had more acid which showed more citrus notes compared to when we typically pick the grapes. Once primary fermentation was complete we put the wine into bottles and started the aging process. It took about 6 months to come around in bottle and then the fun began. We played around with different residual sugar amounts and this is our driest one yet at .5% residual sugar.
